In our household, breakfast is a very simple affair: On weekdays, it’ll be bread with jam with butter, Post cereals, muffins & cupcakes which I baked the night before or the occasional ham/egg/ tuna sandwich. On weekends, Daddy loves to bring us out for breakfast and we would indulge in local hawker fare such as Kaya Toast with Runny Egg (Slurps!), Indian Roti Prata or Teochew Fishball noodles.
When I saw Adora of The Gingerbread Mum hosting this Breakfast for Champs series, I knew I wanted in as it’s been a while since I personally whipped up something for the family. I’ll be sharing 2 nutritious and colourful breakfast items which are ideal picnic food for outings too! They are easy, time-saving and yummy meal options which are perfect for busy, multi-tasking moms!
Recipe 1. Savory Rainbow Chicken Wrap
(Adapted from our favourite family recipe book – DK’s Children’s Cookbook)

Ingredients:
2 skinless boneless chicken breast (sliced into strips)
1 small yellow, orange, red and green capsicum (*Cold Storage sells pesticide free ones in petite size. I find them perfect for small families)
8 flour tortilla wraps (any brand)
Juice of half a lime
1 small cup (200g) of Greek Yoghurt (I use Farmer’s Union)
1 small handful of sugar peas (optional)
Seasoning:
1 tbsp of grated fresh ginger (optional)
2 tbsp of clear honey
1 tsp of salt
1 tbsp of sunflower oil
Steps:
1. Preheat oven to 180C. Place the tortillas on an ovenproof tray and cover with foil. Put them in the preheated oven for 6-7minutes, until they are warmed through. (This is optional step but would greatly enhance the taste).
2. Deseed the capsicums and slice into thin long strips.
3. Mix the seasoning in a bowl. Stir the chicken strips until they are completely coated with the seasoning.
4. Heat the frying pan (I used my Happycall pan) for 2 minutes. Add the coated chicken and pan fry for 5 minutes. The chicken will turn golden and caramelize. Set chicken aside.
5. Add the capsicums to the frying pan. Cook for 5 minutes on medium-high heat. Stir occasionally.6. Spread a tbsp of Greek Yoghurt on the top of each tortilla. Lay some of the chicken and peppers on it. To wrap, fold the empty end inwards and overlap the sides. The filling should be securely wrapped but peeping out appetizingly from the open end.
Recipe 2. Sweet Choco-licious Banana Wrap
This 2nd recipe is really quick, easy to put together (requires no cooking!) and was inspired by 2 of Dana’s favourite things – Chocolate and Banana! Dana was delighted that she could be involved in making these yummy wraps for Daddy and Mommy’s breakfast!
Ingredients:
8 Tortilla wraps (any brand)
2 tbsp of Nutella Spread
1 punnet of strawberries, washed and sliced
1 comb of ripe bananas, sliced thinly
Juice of half a lemon
Steps:
1. Place the sliced banana slices in the lemon juice to prevent oxidization.

3. Spread the nutella on the tortilla with a spreading knife (or the back of a spoon)
4. Place the sliced strawberries and bananas on the top of the tortilla.
