Pumpkin, Potato, Carrot, Chicken and Broccoli Porridge
Dana has been eating a staple of Pumpkin, Potato, Carrot and Chicken Porridge for dinner for almost a week now. I’ve decided to introduce a new ingredient – Broccoli by mixing it into the porridge. Broccoli is very high in Vitamin C and is a great source of soluble fiber! This makes broccoli wonderful to add to baby food recipes. Am glad she likes it 🙂
Ingredients:1 Chinese Spoonful of Rice
1 Tbsp each of cubed organic pumpkin, potato, carrot
1 Tbsp chopped broccoli florets
1/4 Chicken thigh meat (deboned)
1 Cup (250ml) Ikan Bilis Stock
Method:
Put all ingredients into the slow cooker and boil for 3-4 hours
Puree to desired consistency before serving
*This recipe yields enough porridge for 2 serving 🙂
